Recently been talking about origins and variations of one of Peru' s trademark and divine dishes and this article from a fantastic local blog explains it well..along with some fiercely patriotic words from chef Javier Wong.

“True ceviche is one that is prepared in Tumbes, seasoned in Trujillo, consumed in Lima, spiced up in Arequipa, that is loved in Tacna and runs along the route of Don Andrés Avelino Cáceres to reach our Amazon rainforest”, the chef recently declared by Britain’s The Observer to prepare the best ceviche in the world.“There is only one ceviche and it is Peruvian”, he declares categorically.

El Alamo, Huaycan - Lima
As far east as Lima extends, El Alamo is the furthest settlement of Zone Z in Huaycan - the last "squatted" barrio in Huaycan as the desolate foothills of the Andes begin to rise above. These pueblos jovenes or "young towns" are a result of a mass migration of Peruvians from the highlands especially, to the periphery of major cities - for a better life than the one they have left behind or as victims of terrorism during the 80's.

5 days on a cargo boat through the Amazon


Loading cargo in blisteringly hot conditions in Pucallpa. Port is literally wherever a boat can nestle up against the bank and changes with the height of the river. The boat leaves when cargo is full.














Captain of the Baylon II, Eli Hidalgo Beso from Huanaco. On the river for 21 years and with the Baylon II since its maiden voyage 8 months ago. He oversees 21 crew.
